Tropical Shrimp Salad
This tropical shrimp salad has many of the same flavors of a typical ceviche but includes a good amount of fruit that offers a much sweeter experience.

To plate the salad toss the lettuce mango and jicama with enough dressing to just coat all of the greens. Cut shrimp into inch pieces and add to mixture. You can also serve this as a side or a great pitch in dish by using smaller shrimp and melon balls.
